Real vs Fake Saffron: Five Tests That Reveal the Truth

Real vs Fake Saffron: Five Tests That Reveal the Truth

Most saffron sold in the UK is not what it claims to be. Some estimates suggest that up to 70% of saffron on the global market is adulterated, mislabelled, or outright fake. That tin you picked up at the supermarket, the bargain saffron from an online marketplace, even the jar from a well-known brand. Any of them could contain safflower, turmeric, corn silk, or dyed fibres instead of genuine Crocus sativus stigmas.

But spotting fakes is not that hard once you know what to look for.

The Five Tests

1

The Water Test

Drop a few threads into lukewarm water and wait 15 minutes.

✅

Real: Slow golden-yellow release. Threads stay red.

❌

Fake: Instant red/orange bleed. Threads turn pale or dissolve.

2

The Touch Test

Rub a thread between your fingers.

✅

Real: Dry, slightly brittle. Leaves a golden stain on skin.

❌

Fake: Too soft or dusty. Red/orange stain or nothing.

3

The Smell Test

Rub a thread and hold it to your nose.

✅

Real: Sweet, honey-like, with earthy and faintly metallic undertones.

❌

Fake: No smell, sharp chemical scent, or smells like turmeric.

4

The Taste Test

Place a single thread on your tongue.

✅

Real: Subtly bitter and slightly sweet at the same time.

❌

Fake: Purely sweet, harshly metallic, or flavourless.

5

The Price Test

Genuine saffron requires roughly 150,000 hand-picked crocus flowers to produce a single kilogram. If someone is selling you saffron at a price that seems too good to be true, it is. Expect to pay at least five to eight pounds per gram for genuine, tested saffron in the UK.

Common Counterfeits to Watch For

🌻
Safflower petals: Thin, flat, and orangish. They lack the trumpet shape of real saffron threads and feel papery.
🌽
Dyed corn silk: Fibrous and uniform. Stained with food colouring that bleeds immediately in water.
💫
Turmeric-coated threads: Real saffron threads coated in turmeric powder to add weight. Visible as fine dust at the bottom of the container.
🧸
Coconut fibres: Coarser than real saffron. They do not release colour naturally.
⚠️
Ground "saffron" powder: The most dangerous category. Virtually impossible to verify by sight. Always buy whole threads.
