Saffron Seafood Paella
A Spanish-Mediterranean paella with golden saffron rice and tender shrimp.
Saffron Prep
Warm infusion
Ingredients
● 1½ cups paella rice
● 3 cups stock
● 1 pinch saffron (infused)
● Onion, garlic, tomato
● ½ tsp smoked paprika
● Olive oil
● Salt, pepper
● 12 shrimp
● Lemon, parsley
Method
1. Sauté onion, garlic, tomato in olive oil.
2. Add paprika, salt, pepper, rice.
3. Add stock + saffron infusion.
4. Cook without stirring 15–18 min.
5. Pan-sear shrimp and place on top.
6. Cover, steam 5 minutes.
7. Garnish lemon + parsley.
