Saffron Prep
Warm infusion
Ingredients
Scallops:
● 8 scallops
● Olive oil
● Butter
● Salt, pepper
Cream sauce:
● 1 cup cream
● 1 pinch saffron (infused)
● 1 garlic clove
● Salt, pepper
● 1 tbsp butter
Method
1. Sear scallops 2 min per side.
2. Heat cream with garlic + saffron; simmer.
3. Remove garlic; whisk in butter.
4. Plate scallops in sauce.
