Lobster with Saffron Couscous

Golden saffron couscous topped with buttered lobster and herbs.

Saffron Prep Ingredients
Ingredients
Couscous:

● 1 cup couscous
● 1 cup broth
● 1 pinch saffron (infused)
● 1 tbsp butter
● Salt
Lobster:
● 2 lobster tails
● 1 tbsp butter
● 1 tbsp olive oil
● Salt, pepper, paprika
Method
1. Heat broth, add butter + saffron infusion.
2. Pour over couscous; cover 5 min; fluff.
3. Sear lobster in butter + oil until golden.
4. Serve lobster over couscous.
