Mediterranean Saffron Shrimp

Saffron-marinated shrimp grilled on skewers, topped with feta and herbs. Served with Mediterranean greens. 

Saffron Prep Warm infusion (savory) Ingredients For shrimp:
● 12 shrimp
● 1 pinch saffron (infused)
● 1 tbsp olive oil
● 1 garlic clove
● ½ tsp lemon zest
● Salt & pepper
● Wooden skewers
For salad:
● Rocket, spinach, parsley
● Cherry tomatoes
● Olive oil
● Lemon juice
● Feta cheese
Method
1. Mix saffron infusion, olive oil, garlic, lemon zest, salt & pepper.
2. Marinate shrimp for 20–30 minutes.
3. Skewer shrimp and grill 2 minutes per side.
4. Toss salad with olive oil + lemon.
5. Plate with feta and herbs.
